Studies on the Compositional Changes of Garlic during Growth


Abstract
Results on the analysis of alliin and free amino acid content in various parts of garlic and during its growth were as followings:
1. Alliin content in leaf increased slightly during bulbing stage but decreased drastically during maturing stage.
It also increased in bulb during growth and increased rapidly during maturing stage.
2. Twelve free amino acids of matured clove analyzed by PPC were reported up to now but 18 were detected by GLC in this experiment.
3. Results on the changes of free amino acids in various parts during growth showed that 15 kinds in leaf and bulb during leaf-growth stage, 15 in leaf and 14 in bulb during bulbing stage, 15 in leaf and 18 in bulb during maturing stage were presented.
4. Free amino acid contents in leaf were about same as bulb during leaf-growth and bulbing stage but it was much higher in bulb than leaf during maturing stage.
5. Phenylalanine was only detected during leaf-growth and maturing stage and hydroxyproline, cysteine and cystine were found in bulb during maturing stage.
It was very interesting that during maturing stage glutamic acid in bulb was more than 10 times than in leaf and tryptophan in leaf was more than 2 times that in bulb.
